Dark & Stormy Date-Bran Muffins

These dark li’l hunks of dense, sweet goodness are the perfect accompaniment for a rainy day. The rich flavour of the molasses plays nicely with a hint of citrus (courtesy of the clementines) and a spicy bite of ginger. Pair with a cup of tea and your favorite spread. Makes 12 muffins, so share with a friend.

What You’ll Need
– 1 1/2 c. flour
– 1 c. oat bran
– 1/4 c. sugar
– 2 t. baking powder
– 1 t. baking soda
– 3/4 t. ground ginger
– pinch salt
– 3/4 c. almond milk
– 1/4 c. plus 2 T. blackstrap molasses
– 1/3 c. vegetable oil
– zest of one clementine
– 1 T. clementine juice
– 1 c. chopped dates

Preheat oven to 350 F.

In a large bowl, combine dry ingredients. In a smaller bowl, stir together the wet ingredients. Add wet to dry and stir until well combined. Fold in the chopped dates. Fill greased muffin tins about 3/4 full with muffin batter. Bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let cool, and serve with your spread of choice (pairs well with vegan margarine, or – if you’re feeling crazy – ginger marmalade).
